







Every now and then I want something quick and easy for breakfast. November was such a busy month and quick-grab options like muffins have been perfect for taking into the office. Since muffins are made in bulk, after I eat one or two, I’ll place the rest of the cooled muffins in a gallon-sized freezer bag and just take them out as I need them. It usually takes only an hour or less to thaw in the mornings.
I had two apples remaining in the fridge so I decided to dice them up and bake them into these apple cinnamon muffins. I found this wonderful recipe from Sally’s Baking Addiction and enjoyed every single bite. I did not do the apple crumble topping but I’m sure that would be even more delicious.
