I’ve been making more of an effort to eat more produce. After learning to make bread at home, including pizza crusts, sandwich loaves and tortillas, I realized just how much of my diet comes from carbs. I picked up a fruit that I seldom buy, blueberries, and planned to make blueberry pancakes one Sunday morning. I did and they were delicious! But I had a good amount leftover by the middle of the week. I decided to google “Blueberry dessert” and found this blueberry crisp recipe from The First Year Blog. Since I only had less than a cup remaining in the container, I decided to adapt the recipe for ramekins (essentially cutting all measurements down to 1/6 of their original proportions). After the desserts finished baking, I topped them with two sprinklings of granulated sugar each and topped with ice cream from the freezer! It was the perfect zero waste recipe.
